You have a couple of options. If you are in a war with another player, the capturing of the valley will reduce his resources, meaning that he can no longer get food for his troops. This is good when he can't feed his troops..they revolt. Any capture of another's resources is a good thing. Try for his water sources, it's the quickest way to reduce his food supplies.

The valleys you capture are the most valuable resource outside of your town. Water sources are more valuable than a wood or a mountain. The water sources will give you a food source outside of your farms, so any water source is the more valuable. You may have a resource valley for every level you are. Therefore, if you are a level 5, you may have five resource valleys.

You may not build on them until you have the resources to do so. The mountain, water, or wood valleys are not buildable. They are strictly for resources, which go up when you conquer one.
