I love it best when it is partially ripe and has a wonderful sweet and sour flavour.An interesting thing about the mango is it has the same substance in it's skin as poison ivy, The substance is urushiol. The mango and poison ivy are from the same family. It is only the skin of the mango that has urushiol. The pulp is free of this substance. I am not allergic, and poison ivy has little effect on me, but I notice when I handle and eat a mango right off the rind, I get a slightly itchy, burning sensation on my lips, and this would be the urushiol.
