You need to use a good quality, firm apple, such as Golden Delicious or Granny Smith. I use a combination of the two because the golden delicious are sweeter and the granny smith tend to be more tart. A lot of supermarkets have a sign by the apples stating the best uses for that type of apple. Most importantly is that if the apple is dry or has a mushy texture when you eat it raw, it will make a bad pie. You want a good crisp apple if you plan to use it in your pie.
