The phenomena you describe has to do with a gene that attaches these sugars to the surface of the blood cell, we'll call this gene H. Even if the father codes for type A or B sugars, if he is defective in gene H the father will look like blood type O. If the baby gets a functioning H gene from the mother, the baby can then get either an A or B from the "O-type" father and an A or B from the mother and can therefore be AB positive.
