The scenes at Mission Control were shot at the actual old control facility for the Apollo missions in Houston. The launch scenes, space scenes, and pictures of the Command Module, as well as the splashdown sequence were all models and CGI. The capsule, LEM, and CM scenes were special sets recreating the technology of the day actually used.
The zero-gravity scenes were real however; they were shot in NASA's "Vomit Comet", the special airplane that climbs and dives at a controlled rate, giving passengers weightless conditions for about 90 seconds.
