The choice depends on various factors. Wool batting is nice if you live in a cold climate, and it is very easy to work with. Polyester is easy to find almost everywhere. My personal preference is 100% cotton, it breathes well, washes nicely, and is great for a variety of projects. If the rest of my craft or quilt is all-cotton, it just makes sense to me to keep it that way.
