Many of the French Acadians, who originally hailed from France and settled in Canada, traveled south to southern central Louisiana where they settled close to the coastlines. They brought with them their French language, although the dialect was and had further evolved far away from traditonal French. It is still spoken in many families and many phrases and words have been adopted as part of our conversational references. They also brought their culture of food, which is celebartory as well as rich in flavors and ingredients which is the center of all familial gatherings and occassions. In addition, they brought their music and style of dance, and in essence, how they celebrate not only milestones in life, but ordinary events. These are the members of our local communities to which we lovelingly refer as "Cajuns," the shortened and slang version of Acadians.

A proper categorization is "Louisianian." However most Southerners refer to them as "those crazy Cajuns". The name is a shortening of Arcadian, and the original Arcadians were forcibly settled from Canada as I remember. The poem "Evangeline" commemorates the event. The name is actually Acadian, since their country was Acadia. The British forced the Acadians out of their homes and many ended up in Louisiana. It is now called Nova Scotia, part of Canada.

Additionally, storing grains enabled communities to have reserves during times of conflict or emergency.
