There is a nut just above the large black plastic string holder. Hold the nut and unscrew the black plastic string holder (it is reverse threaded). Once the string holder is off, pull the button on the bottom string holder until it comes apart. Wind new string on and put it all back together as you pulled it apart.

I would say that plastic cups are better for string telephones because you cant get string through a metal cup.
