Billhooks were made of steel. They were agricultural tools made for cutting and pruning, with a curve in the blade and the inside edge sharpened, as it is on a sickle, but rather more heavily built. The weapon was made by attaching the agricultural billhook to a pole, and if there was a spear point as well, it made a formidable weapon. Such weapons were mostly used by agricultural workers formed into militias, rather than soldiers. In the Renaissance, billhooks were built for military purposes, much as halberds were.

Billhooks would mostly be used in farming, and in particular, in the pollarding and trimming of trees.
in times of war, however, a pointy, bladed object on a stick is preferable to a stick without any pointy bit of metal, and they would be pressed into service for the poorer footsoldiers or militia to use. the billhook would be replaced in use by the halberd, which performs a similar purpose, but is designed solely for military use.

Yes, polyphony was used during the Middle Ages. We do not have any real idea of when polyphony was introduced, but the earliest texts describing it date to the Early Middle Ages. By the end of the Middle Ages, it was highly developed. There is a link below to an article on polyphony, beginning at the section on its origins.
