Observance of Passover, when the Temple in Jerusalem stood, required that every family slaughtered a lamb as an offering of thanks. The lamb then had to be roasted and eaten that night. Any of the lamb that wasn't eaten that night could not be eaten at a later time.

Also, no different than today, unleavened bread (matzah) was a key part of the observance of Passover.
