The stone could be used to reinforce the castle. Most castles had a faux fronting. The castle started as a Mott and Bailey castle made of wood and when gunpowder came in wood just couldn't withstand the cannon balls. So instead of rebuilding the whole thing they put a stone facade in front of the wooden walls. The leftovers bits of stone were used as filler between the facade and the wood. It looked like it was ALL stone and couldn't be breached. One of the primary purpose of a castle was to display power over the area and have an invader think twice about trying to take it.
