Assuming all the quilts are the same the 2 will be warmer.

If the choice is of one larger quilts or 2 smaller quilts depending how small the small ones are and how large the large one is, having the two layers is normally better as it provides similar warmth but allows more control of how warm you are as you can strip away one layer and still be covered.

The acid-free paper helps keep it wrinkle free and the environment inside whatever storage device you choose more stable.
