the breed doesn't really matter...the height of the horse matters.
For a truck I would get a Dodge Ram. If your budget can afford you can get a navigator lots of space and good car for a tall person. To make sure check some car classifieds in the internet and get the best deals for SUV's.

I see no reason why a tall person would not fit in a Mazda B2000 because the seat can be slid back. If the person is extra tall, perhaps an extended cab would be best because the seats will slide back further than in a standard cab.

Most all healthy horses can jump. But the best breeds would be Hanovarian, Warmblood, and other tall breeds with thick, strong legs. Never jump an overweight, lame, immature, or injured horse. It all depends on your horse's heath.
For that you would probably need to ride a 13hh pony to 15hh horse.
