To put it simply, a person would not survive. The enzymes allow chemical reactions to occur. Without enzymes, the body would not be able to gain nutrients, flush out toxins, or exhale carbon dioxide.

Chemical reactions wouldn't occur properly and since there are hundreds of thousands of chemical reactions that must occur every minute in the body to maintain life, a lack of enzymes would result in death rapidly.
