I can't say much about why besides evolution. :D But from what I know, if your heart was an voluntary muscle, that means you have to constant keep reminding yourself to pump blood to your entire body. The moment you stop thinking about it your heart stops pumping and you die.
Most likely, you wouldn't be able to know how to control it, so you would have either too much blood flowing, or not enough. In either case, your body would not be able to run correctly.
