Space was probably white around a million years after the Big Bang - the birth of the Universe, when the background radiation was at a very high temperature. Now the universe has expanded and cooled down, so the background radiation is at a lower temperature and does not appear as visible light but as faint microwave radiation. If space was white we could not survive those conditions to observe it.
