If an attempt was made to dump all the matter in a galaxy into a black hole, the matter would likely be stretched, superheated into plasma in the accretion disk, some converted into radiant energy or accelerated away at relativistic speeds, but most would enter the black hole never to return. As it gobbled up the matter the black hole's size would increase in proportion to the amount of mass it consumed, and would become quite large (a radius of about one fifth of a light year!). This however is extremely unlikely since in a real situation laws of conservation would cause matter to retain its orbital inertia with respect to a black hole that made a sudden appearance, and probably stabilize into the familiar form of a galaxy.
