it depends on when "today" was... if "today" was days and days later after you had bought it on saturday, then your turkey probably rotted! if it was a day later then i'd be bringing it back to the store for a refund and probably not shop there anymore cuz their refrigeration must be bad!
oh, and if by "fresh" you mean a turkey farmer just chopped the head of in front of you then eeewww and maybe ask the guy with the ax why the wing is green.
Kosher turkey comes in both fresh and frozen.
Fresh turkey stock should be good for 3 to 4 days refrigerated.
