One would need a server backup because the data contained on the server could be lost in many different ways: It could be disrupted in a hack attack and deleted or maliciously modified, the server hard drive could break and the data could be lost. The data could even have been maliciously deleted!
Most companies do not need a managed server. If you need a server a virtual one will uit your needs.

Well you can't just change it like that. You have to copy the world file create a new server with the bukkit .jar delete the bukkit server's world file and copy the old one in. Remember to back the old one up before you do this.
Someone can build their own server by first securing the necessary hardware such as the CPU, motherboard, harddrives, disc drives. Next they will need to install the server software. Lastly the server will need to be configured.
