Firstly, they could not observe you since light can't escape from a black hole. But, if you were to think about this science fictionally, then one would observe you getting mixed with the other particles in the black hole, then contracting, and finally dieing.

A distant observer watching you get sucked into a black hole might notice several effects, most of which would be deleterious to your health. Tidal force would cause a spaghettification or stretching into a long thin shape, especially with smaller black holes; interactions with the accretion disk or relativistic polar jets, for example from friction caused by interaction with other matter as you spin around the black hole, caused by its intense gravity, could vaporize you and heat you up until you emitted x-rays. If you somehow didn't get stretched or vaporized by these effects and were able to approach the event horizon, time dilation effect would cause the distant observer to notice that you seemed to slow down as you approached the horizon, although for you time would seem normal and you might not even know when you crossed the event horizon.

Their is not more info about this because there are no evidences of humans being sucked into black hole but once sucked in, the object which has been sucked in will not be able to escape out from black hole's event horizon as a black hole very very very very very strong gravitational field. But some scientists say that object which went into the black hole comes out through a white hole (which is just the opposite of black holes in all aspects)
