When there was only one movie, it could be referred to just as Star Wars. However, that was always part of the title. Once additional chapters came out (and there were originally supposed to be nine, not six) it was necessary to identify which one was meant by referring to the specific chapter title. (Calling them chapters refers back to the serials that were popular in the movie theaters back in the 1920s and 1930s.)
