N refers to nitrogen in most cases in chemistry.

When it is used prefixed in a chemical formula, for example:

N-methylaminoethane

it means that the following functional group (methyl) is attached to the nitrogen, in this case we have an amine consisting of an ethane bound to a nitrogen, and an additional methyl group is attached to the nitrogen, making it a secondary amine.

If there is more than 1 nitrogen, they will be referred to with apostrophes to differentiate them, for example

[N, N']-dimethyldiaminoethane

Would be an ethane, with a nitrogen attached to each end, with a single methyl group attached to each nitrogen.
