Newborn pups are safe to handle when they start growing fur.
The reason for not holding them when they're born is because if you get your scent on them the mother will think it's not her, therefore eat it.
Ps: If your mother hamster has more babies then she can feed, take some babies out to give her a smaller litter to care for and nurse the other babies yourself. She will eat the babies if they're too much work for her.

A newborn hamster is smaller than a newborn rat. Hamsters are typically 2-3 inches long at birth, whereas rats are around 4-5 inches long. Additionally, hamster pups are born hairless and blind, while rat pups are born with fur and their eyes closed.

If a hamster mom eats some of her pups, don't worry. It's natural. It means she doen't think she can handle all the pups so cuts down the numbers. If you don't give the mom enough to eat and drink, she will kill her pups and save them a long death of dehydration or starvation. Also, if you touch the pups, she might reject them, or eat them to protect them. It sounds wierd, but it's just nature.
