Gerbils mate again right after the babies are born, so you might end up with another litter even after you separate them. If I don't want any more gerbils can I separate the mother with the female babies and the father with the male babies?

Yes, you can after the pups are weaned (around 5 weeks of age). However, it is recommended not to keep more than 2 females together in one tank, and no more than 3 males in one tank, as gerbils can get territorial, even with daughters and litter mates after a while. However, if you have not yet separated mom and dad, the mother is probably already pregnant again, as the mother gerbil will mate again shortly after birth.
