One night, unable to endure hunger any longer, he fed on some passing deer. By doing this, he realised he could avoid feeding on humans, and so he committed himself to resisting his blood lust and to becoming a doctor, to look after humans (which is also something which vampires usually do not do. Vampires usually want to hurt humans, not heal them.)
Carlisle did not try to kill himself because he had a strong moral compass and believed in using his immortality to help others. He dedicated himself to self-control and finding a way to live without causing harm to humans.
