Assuming you did nothing to disturb the timing it would not have to be reset just for changing the head gasket.
If miraculously the pan gasket remains intact you do not need to worry about changing it. However being a 91 it will most likely break or be to hard to re seal and therefore need to be replaced.

From what I read it has a timing chain, not a timing belt. I asked the dealer about scheduled maintenance, and changing the timing belt was never mentioned.

A 2000 Chevy S10 does not have a timing belt.
IT don't have a timing belt to change.
