It seems to me that it started with the retail market. Target stores, etc. Since Christmas is why the retailers are making such large sales, it was offensive that they tried to be ashamed of December 25th, while collecting the profits.
Christmas is already secularized. Christians and non-Christians alike celebrate Christmas. One with an emphasis on Christ, and one with an emphasis on Santa Claus and gift-giving. That is why people get upset about it...because it is already secular and sacred. It is purposely picked on. We don't call Hannakuh candles holiday candles, etc.
Anyway that is the way I remember it. It seemed to be retailers buckling to atheists, while at the same time collecting the profits from the purchases for December 25th, Christmas.
It saying happy holidays people may say it if they don't celebrate Christmas or because it's the three holidays right after each other thanksgiving chritmas and new years
Saying "Happy Holidays" to someone is politically correct because not everyone celebrates the same holiday. Saying "Happy Holidays" will be less offending than telling someone "Merry Christmas" who does not celebrate Christmas.
Because saying "Merry Christmas" can be offensive to some people. As wrong as this is, that's how the world works these days.

i think it is because Jewish that don't celebrate Christmas, instead they celebrate Hanuka so that also go's to the point of saying happy holidays at stores than merry Christmas. and also they find it pretty offensive for some reason
Although there are some genuine holidays near or on Dec 25th most use the generic Happy Holidays expression to minimize the affect that Christianity and it's influence in the public discussion. Secularists continue to attack Christianity and won't be satisfied until it is eliminated, unfortunately. If there are other holidays near or on that date then simply refer to them by name, no problem. But if you're talking about Christmas Trees and Christmas Cards and Christmas Gifts and baby Jesus well then you need to call it what it is, Christmas. People say Happy Holidays not to attack Christianity, but to be polite, because guess what, not everyone is Christian and not everyone celebrates Christmas. So if you want to be polite, say Happy Holidays if you do not know if they specifically celebrate Christmas or not (if you know someone does then it is of course acceptable to say Merry Christmas). It is fair and polite; it groups religious as well as ethnic holidays into one.
People say siblings to shorten things. Instead of taking the time of saying brothers and People say siblings because it keeps thing vague It is part of the same type of thinking that has replaced the word Christmas with the word Holiday. MS instead of Mrs and so on.
