When did Priests become Celibate?

Eastern Orthodox priests never did. Many Catholic priests in the middle ages were married and/or had mistresses. The priest become celibate when he pledge his virginity throughout his life from his younger age to his death.Likewise he should fulfill his oath of chastity.
Individual priests could always choose to be celibate - just like any individual could choose to be celibate. But having priests and bishops take a vow of celibacy became a firm tradition for Latin Rite (Western) Cathoilcs in the early Middle Ages. Eastern Rite Catholics do not require priests to take a vow of celibacy and in fact married priests are pretty much the norm. And even today there are some married men who are Latin Rite Catholics (although it's rare). For example, a mirred Lutheran or Episcipalian priest who converts to Catholicism could remain married and be a Catholic priest.
