Cooking method The oil should be appropriate for how you actually cook. Avoid allowing oil to smoke, and avoid repeatedly heating or reusing cooking oil. Quantity matters too Even a nutritionally good oil is still calorie-dense. The goal should not simply be to find a “healthy oil” and then use unlimited quantities. Overall dietary pattern and portion size matter. Variety can be useful There is no requirement to use the same oil for every purpose. Different plant oils have different fatty-acid profiles and culinary characteristics, so using suitable oils according to the food and cooking method can be a sensible approach. I have spent 19+ years in pharmaceutical manufacturing and have also worked extensively around quality, processing and product standards. In my experience, when evaluating an edible oil, I would look beyond the front label and ask questions about raw-material quality, extraction conditions, moisture, filtration, oxidation stability and quality control.
