The time to hold them is when their eyes open, from days 17-21. If you don't, the parents will smell your scent on them and they will kill and eat the babies. On the other hand, if you have had your gerbils for over 6 months and they are used to you, then it's fine to hold them a little earlier.

If it is a 2 week old gerbil, than its still a baby. I would say one should not be put in a sand bath until about 6-7 weeks, when they're more mature.
