Any age is best but, if you want their trip to be memorable and imprinted to their minds, take your children at the age of 4 or 5.

It will take over 4 hours to get from Miami to Orlando. Walt Disney World has 4 major parks and 2 water parks so you will only get to see a small portion. If you leave Miami at about 4AM you could be at the parks when they open. Plan on staying the 1 night at a Disney resort so you can take advantage of Extra Magic Hours. On your second day stay until the last park closes (including Extra magic Hours) and start home. Some nights the parks might even be open until midnight for resort guests.
It completely depends upon the theme park. Some, such as any of the Disney(tm) parks, have enough there to take days to "do it all", while other smaller parks can be consumed in a day or less.

You can take a picture with any character you see in the parks but you are going to have to wait in lines. There are photographers around the park that take pictures at certain destinations and they give you a photopass. With the photopass you can give the ticket to any Disney photographer and when you get home all you your pictures will be on it. Or you can ask the photographer to take a picture with your camera.

If you are asking about operating hours, then I would suggest going to Disney World's website and looking at the calendar page. It might take some searching to find it, but you will.
