I would say that broth is a liquid, as it flows freely unless it is kept in a confined area. It isn't a gas as it cannot diffuse or change volume and isn't a solid unless frozen. the steam from hot broth could be a gas though...
(Explanation): If it is between the liquid and gas phases, we know that it is at the boiling point of water (liquid boils into gas). So, another way to say boiling is evaporating, and the opposite is condensation, because both are happening at melting point, like they talked about in the lesson.

Evaporation from a pond is not a chemical change. It is a physical change. The water that leaves the pond and goes into the air is not changed from water into some other chemical compound. It's still water, but in the form of a vapor or gas. As the water doesn't chemically change, evaporation is a physical change and not a chemical one.
