The more energy a particle has (such as temperature) the faster it moves. Particles in a liquid that acquire increased energy have the ability to break free of the surface of the liquid and convert to a gaseous state.

When you run a tap, and it's a HOT tap, and you pour the scorching water into a cup, you can cause that to be hot and then, a gas appears!

So, you have your little mug of coffee, and then, you see this steam, and this, is the water being a GAS.

So the change that occurs is-

A change of state, a change from a liquid to gas!

(so hope I'm right.It was a question in my textbook and I wanted an answer, so I made a guess.)
