oil is lighter than water so the oil floats on the water. you can prove it by shaking a bottle with water and oil and shake it then leave it overnight then check it and you'll see why oil and water don't mix .

There is a chemical reason that oil and water cannot mix. Water is what is known as a polar molecule, meaning that one end of the molecule is positively charged, and the other is negatively charged. Oil, however, is made up of non-polar molecules and therefore does not attract the surround water molecules. Since the oil is separated from the water, eventually the oil will gather together.

Water and oil do not mix because water is a polar substance and oil is nonpolar. The general rule of solubility is like dissolves like.
