I just googled that same question and there were very few pages that addressed it. But the one I liked the most and which I just used when I sent a thank you letter was: "Thank You - [Reference position]". (No quotes in the subject line)

I think you should write "Thank you" then briefly specify for the position for which you are interviewing.
