Food Acid 338, usually known as phosphoric acid (H3PO4) is the main reason soft drinks such as coca cola are acidic. The acid is added to balance out the extreme sweetness of all the sugar in the mixture. I would assume that the soda would still be faily acidic at higher temperatures, even though there is less carbonic acid, which is what you are talking about.
