The best answer that I have heard relates to the "coat of arms" that are often used to signify a family etc in medieval times. Since many people in those days were illiterate a hotel, pub, boarding house, etc would display a picture i.e. "coat of arms" to identify itself rather than have a name on a sign. That establishment would then become know as the _____ Arms. This trend then carried over to lodging establishments in the US but over time the picture aspect became unnecessary however the word "Arms" stuck. Hope this helps! PPM
