The University of New Mexico is ranked on all lists. New Mexico is among 10 new states joining Texas, California and Florida on the list of the top 25 states for conferring doctoral degrees. The source for the data is NCES, Digest of Educational Statistics. Some data is from 2005, others from 2006. "This recognition confirms our sense that UNM is in a position to be - and is recognized as - a leading institution in the country for Hispanic students. UNM is uniquely positioned to meet the needs of Hispanic students and the nation's need for increasing the numbers of Hispanic doctors, lawyers, MBAs and PhDs," said Provost Reed Dasenbrock. UNM is ranked among the top 25 for conferring master's degrees to Hispanics with 75 of the institution's 458 male master's students being Hispanic; 188 of the 757 female master's students being Hispanic. The combined number of Hispanic master's students, 263, represents 22 percent of UNM's total master's student population. UNM is ranked among the top 25 institutions for conferring doctoral degrees to Hispanics with 10 of the institution's 96 male doctoral students being Hispanic; six of the 85 female doctoral students being Hispanic. The combined number of Hispanic PhD students, 16, represents nine percent of UNM's total doctoral student population. Of UNM's 2,721 male graduate students, 428 are Hispanic. UNM's female Hispanic graduate student enrollment is 746 of the total female graduate enrollment of 3,708. Total Hispanic graduate enrollment, 1,174, represents 18 percent of the institution's total graduate student enrollment. The article notes that women dominate men on both enrollment and master's degrees list, but the percentage drops 40 percent in doctoral programs. "Women outnumbered men in 14 of the 25 schools and tied with men in one school (Rutgers University in New Jersey) on the doctoral degrees conferred list," the article states.
There are schools that offer MBAs online but you may not be able to get a scholarship. Cal State offers a good MBA program for only $3000, which is reasonable.

From my experience, employers don't specifically look at where you received your MBA (online or on-campus). Most people that are receiving an MBA have some business or management experience along with the education. The only time this would matter is if you wanted to get a top 5 MBA which is extremely expensive to begin with.
