Zombies are generally thought to just be reanimated flesh. When the flesh is reanimated, the only brain functions remaining are those that allow for ambulation, and those that control the basic need to eat. Hence why zombies are always trying to eat people. I'm sure, however, that there are some books/movies out there that have more evolved, thinking zombies. However, zombie canon is an unthinking eating machine.
