Passover always starts on the 15th of Nisan on the Hebrew calendar. It's the same date every year on the Hebrew calendar.
I'm guessing that you're referring to eating Matzoh, and refraining from leaven for the full 7 days of Passover. The exact details are quite lengthy and technical. Very briefly, the Jews received a detailed command from G-d to celebrate Passover this way during the actual exodus from Egypt (around 3300 B.C.), and included in this command were the instructions to repeat it every year on these days.

Passover. It is important to note that Jewish holidays are not defined by Gregorian Dates. Therefore, it is perfectly possible for there to be no Jewish holiday on April 10th of a given year.

Although some Christians can choose to reference Passover, they do not celebrate the actual Jewish holiday of Passover. The main reason being that the beliefs of Christianity are diametrically opposed to the meaning behind Passover. Christians celebrate the holiday of Easter which occurs at the same time of year as Passover (although the two holidays are completely unrelated).
Gefilte fish is eaten on Sabbath and Festivals throughout the year. It has no specific relevance to Passover.
I believe they travelled to Jerusalem to pay taxes and celebrate Passover while there. After leaving they finally noticed that Jesus was not with them. Frantic, they returned and found the 12 year old Jesus speaking in the temple.
That is not documented in the Bible. Probably most were in Nazareth with his family.
