All solids, including your body, have what we call "a center of mass". This is effectivily where the gravitational force (G) acts on the body.

When you stand in a straight road, the normal force (henced called N), acts from the ground and up and balances gravitation. This is the basic understanding of why solids do not fall or accelerate through the ground. the force N, does allwayspoint straight up from the ground, while gravitation points to the center of earth.

When you walk a slope, the forces G and N are no longer parallell, which causes gravitation to gain a momentum = G x r, where r is the distance from your center of mass, to where your feet touch the ground. This momentum intents to rotate you backwards and down the slope.

The answer,

By leaning forward you place your center of mass closer to the ground (decreasing 'r') and forces the N force to go parallell to G, which breaks gravity's momentum on your body. Hence you prevent falling backwards.
