My 1 year old son loves broccoli with sauce. I usually make him beef and broccoli. You can find the recipe for that anywhere, but I personally use the simplyrecipe.com version.
All you really need to make a great pasta salad is olive oil and a touch of vinegar. Add some texture and color by including broccoli, carrots, and other vegetables. Don't forget the salt and pepper!
Find a good recipe and have lite or no salad dressing ! I recommend adding fruits for flavor and moisture to make up for the lack of fatty dressing.
I'm not much for broccoli myself. However I have noticed that even the least likely of veggie eaters love the simple broccoli and chesse recipe. Just boil up some broccoli and cover it in velveta chesse. I've seen kids dig for that one. You could also try having her eat it with veggie dip on it. That also make the vegetables a little better. You can also something like hiding them. Perhaps chopping them up in a salad. With all the other ingredients theres a good chance she may never notice the broccoli.
Sesame noodles 1 lb uncooked spaghetti noodles 1/2 c creamy peanut butter 2 Tbls Rice vinegar 2 tsp soy sauce 1 tsp sesame oil 1 Tbls sesame seeds 1/4 cup warm water broccoli florets 1 med red bell pepper 1 cup sugar snap peas sliced 1 med jalapeño pepper with seeds and rib removed Cook spaghetti as directed on package. Combine peanut butter, vinegar, sesame oil, soy, and the jalapeño in the blender add the warm water to thin as necessary. (I taste at this point and adjust if needed) When the noodles are done drain and pour on the sauce. Add the chopped up vegetables and stir thoroughly. Put into a pretty bowl and serve room temp with the sesame seeds on top. Also good with any of your favorite crispy raw veggies in your favorite combinations.
An easy recipe to make that is cheap is fruit salad :)
