It really depends on what you are going for.
If you are just looking for a day camp, you can always play to your interests because communities usually have programs at the schools during the summer.
But if you want an all-summer or even 1 or 2 week sleepaway camp you will have limited options. I don't know the specifics about camps in Florida because I'm in NJ, but there is always girl or boy scout camps that are fun.
You could also check with your nearest YMCA.
