Which one you buy depends on what your requirement is - if you want to display your photos on the wall then matte is the best choice for you as it wont reflect light/glare, if you want to print a lot of photos to set up an album then gloss is the better option.

Try using goo gone and then wash immediately. I haven't tried this yet but I heard using Dawn (or Ajax) on it and then washing it as usual, but don't dry it because then a soap stain will set. Or you could get dawn & baking soda. Or hairspray. (: I haven't tried them but I think they might work.
