I was unable to find a stitch diagram for crocheting a sackboy. There are copyright issues when you are attempting to make a copyrighted character, and you would have to have a licensing agreement with Sony (owners of PS3), or Media Mart (I think it is), to get such licensing. This generally costs plenty of money, and independent designers don't often have that type of money available to use for such licensing.
The best that I could do was find a fairly well written out pattern instructions online on eHow.com (link attached), this might help you work out the pattern.
Another choice would be to look around for other amigurumi stitch diagrams and modify those to make a sackboy. I have attached a link from Crochet Pattern Central of their amigurumi free patterns, for you to look through and see if you can find such a pattern.
It's not easy to find free online crochet stitch patterns, I know, I prefer using them myself. I have often found that I end up struggling to read through directions and making my own stitch diagram, so that I can crochet a project.
