But remember a riding stable is still a business and the owners do need to make money, so don't take offense if they say no to the exchange.

It all depends on the stable. If you could specify the stable I could tell you. Often you can request horses, and at some stables you ride the same horse for every lesson. But if your riding that horse disrupts it's regular schedule, you probably shouldn't ride it. Horses are used to regular routines, and like to stick with them. However, if that horse is in it's stall and ready to be ridden, I don't see any reason why you shouldn't be allowed to ride him/her.
