They go to the Underworld also knows as Hades. Then, depending on what they did during their lifetime, the part of Hades that they live in for the rest of eternity would be established.

Without Hades the souls would have no where to go once a person died, and they would have no protection.
After they died, the Greeks believed they would go to the Underworld, which was the Kingdom that Hades ruled over. There were multiple parts of the Underworld, if they were evil they would go to the field of Punishment, if they were good they would go to Elysium and get like pampered and stuff and if they did nothing really special they'd go to Asphodel and do.. nothing. There was also Tartarus, where the monsters and some of the Titans went. To go to Elysium or the fields of Punishment, they had to be judged in Erberus. :)
