The easiest food in many cases was fish and other seafood. But most sailing ships carried stores of dry bread (hard tack), salted meat, and dried beans. In tropical climes, coconuts and fruit were sometimes available, but most did not keep well.
Most ships had a hold at the bottom of the ship that carried water, dried food, and some fresh food. When ships were in port they bought food. Most of the food and water wasn't very good after a bit. The water got stale and the food with bugs and other things ( a little extra protein ).
