Your question poses questions of its own. If a fire occurs in a school kitchen the precautions have already been ignored. If a fire does occur and it is under the hood suppression system, pull the fire alarm pull station and the hood suppression pull station on your way out of the building. This alerts the building occupants of the hazard and is a first line approach to dousing the fire. Evacuate and let the fire department do the rest. If you have been properly trained you may choose to use the fire extinguisher. Do so only after pulling the fire alarm pull station to begin evacuation of the school. Use the fire extinguisher by applying the PASS method. Pull the pin, Aim at the base of the fire, Squeeze the handle, and Sweep back and forth until the fire is extinguished. Make certain you are using the correct type of fire extinguisher for the type of fire. You will learn the appropriate types of extinguishers upon taking fire extinguisher training. Good luck!
Well, those new little roundy round home pizza cookers don't need a hood, buy they're only good for up to a 12" pizza. Any commercial pizza oven that I know of, will require a ventilation hood. Many areas will also require a fire suppression system. You're talking about a big investment.
The fire thing
Hood cleaning First disarm the fire suppression system if you have one. Turn off all appliances gas pilot lights. cover appliances with card board and than with plastic. Remove filters and scrape grease. After scraping grease spray chemical in entire hood system from top to bottom. Let chemical work for 20 minutes and than steam clean it. You can watch video at my site how to do it. I hope it helps you. Do not forget fire system needs to be armed after cleaning done.
