Go to your profile, and in the top left hand corner there is something that says 'Edit My Profile' Click it, then there will be options such as 'my photo', 'intrests' etc. Click on 'THEMES' then choose a theme you want and click save changes! Hope that answered your question!

The answer here is right but on the updated AIM you go to options then click themes. Pick any theme you want!
P.S. if you don't have the updated aim click-http://www.aim.com/ then click download aim(it will update it & not download it again if you already have AIM)
